Pulao recipe
India is famous for different types of rice preparations like sweet pulao, biriyani, kheer etc. I am giving here a very popular dish of rice named pulao, which is the main dish of different Indian festivals.
Ingredients:
1kg Basmati Rice
250 gm mixed vegetables (carrot, French beans, cauli-flower, capsicum ) chopped in fine pieces
200 gm Ghee
50 gm cashew nut
50 gm raisins
1 Bay leaf
4-5 Cloves
4-5 Cinnamons
5-6 Green Cardamoms
1/2 cup refined oil
1/2 cup Rose water
Salt and Sugar according to taste
Preparation:
1. First clean the Rice and rinse it properly.
2. Half cook it.
3. Drain the water and dry the rice in a broad flat surface.
4. Heat the oil in a pan and fry the mixed vegetables.
5. Keep aside the fried vegetables.
6. Heat the ghee in a pan and sauté all the dry spices ( bay leaf, cloves, cinnamon, green cardamom).
7. When the spices are become brown add the half cooked Rice.
8. Add all the fried vegetables.
9. Add salt and sugar according to taste.
10. Sprinkle the Rose water and cooked the whole preparation for 5-10 minute.
11. The Pulao is ready.
12. Serve it with Chicken curry(if non-veg) or any preparation of paneer(if veg).
